On our quest to find good quality wine in France for reasonable prices we found this little jewel which caught our interest. A cuvee made of cca. 10 grape varieties out which 2 are white wines mixed up with some aged wines which are added to the mix...?

The harvest dates are determined by daily tasting of grapes and analysis including sugar and acid levels but more importantly polyphenols. Purpose is to obtain the best possible maturity of tannins in order to avoid herbaceous taste and have an outstanding concentration without aggressive tannins.
Separate fermentation, by "couple" of variety showing the same maturity level. Syrah, Mourvedre and Carignan underwent a cold start fermentation to favor diffusion versus extraction.
Malo lactic fermentation and ageing in French oak barrels from Tronçais and Allier for a part of the blend (30%). Barrel ageing combined with the optimal maturity of grapes, will bring splendid smoky notes.
What does it taste like ...
Almost black robe, with discreet orange tones.
On the nose: red and black ripe fruits, white flowers, mushrooms, then soft spices including cinnamon, coriander, nutmeg, as well as peppery notes as well as balsamic notes.
On the palate we can find soft spices, then black fruits and flowers. Very long and soft tannins.
Have it with game, red meat, white meat with sauce, strong cheeses
What is it made of ...
Grenache, Mourvèdre, Syrah, Cinsault, Carignan, Vaccarèse, Counoise and 5 % of white grape variety (Roussanne and Viognier). 15 % of reserve wine (between 5 at 10 years old)
Drink now or keep it in your cellar for 2-5 years
