We usually have it just on it's own with bread an nice olive oil and maybe a bit of fleur de sel.
What is it made of ...
The grapes are hand-picked then immediately sent to the cellar where a careful selection is made, both of the bunches and of the single grapes, on a double selection belt.
The grapes drop by gravitation into the tanks where they undergo a slow and gradual fermentation for about 25-30 days without the addition of selected yeasts. The wine evolves in 10hl-barrels for about 12 months and later in a bottle for at least an year.
