A wonderfully smooth and deep Chateauneuf du Pape from very old vines.
Splendid deep ruby color with crimson reflects. On the nose the wine exhibits notes of raspberry, black fruits. but also spices : liquorice, provencal herbs and subtle flowery notes. The oak is very subtle with smoky notes coming at the back. The mouthfeels reveals a great purity and minerality with a long finish on liquorice, black fruits and soft spices.
Pair this wine with duck confit, wild boar stew or other games dishes with a wine based sauce or alone with strong cheeses and some good friends.
It is ready to drink but can also be kept for another 8-9 years

50% Grenache – above eighty years old
25% Syrah – 50 years old
10% Mourvedre – 90 years old
15% Collection vines including very old Grenache, Counoise, Terret Vaccarese, Muscardin – 90/100 years old
Long skin contact period at moderate temperature to favour soft diffusion of flavour compounds.
Fermentation by indigenous yeasts and also very limited use of sulphur (at bottling only)
Ageing:
Grenache and Syrah have been aged in small concrete tanks
Mourvedre in demi muids
Syrahs in french oak barrels of one year (allier, tronçais, medium toast)
