Why we offer this to you ...

The "magic of the terroirs" is the base for this exceptional Chateauneuf du Pape says Xavier Vignon. The extreme selection of grapes from numerous little extremely old vinyards forms the luxurious wine.

After careful separate fermentation of all used grape varieties the wine gets assembled and gets it's fine tuning in new barriques and old foudres.

For us this is the highest form and art of wine making which produces this enormously dense and great Rhone red wine. The 95 Parker Points are more than deserved! 

 

What does it taste like ...

All panoply of a big Châteauneuf-du-Pape: red and black fruits, spices and garrigue.

The grapes were harvested perfectly ripe and the result is flawless, with a nice saltiness brought up from the deep soil by the long grenaches roots.

The elegance of its tannins does not impose a long ageing for this Châteauneuf, but it may be kept for a long time in a good cellar. On the palate as expected it has spicy, strong and a long tannin structure. The wine is amazingly deep in taste and reveal a lot of different layers of flavour. The finish just does not seem to end. This wine just does not want to leave your mouth. 

Serve at 15-17 °C. Due to the many facettes of this extraordinary wine it is suitable for fine dishes as well as for more rural dishes.

Some culinary ideas to accompany this wine: Grilled beef , Marengo calf, duck in olives or roasted in figs, boar stew, salmi of pigeon, crown of lamb with confit of tomatoes and of course various tough cheeses (Maroilles, Livarot...)

Robert Parker says:

"Despite the oak aging, there is not a trace of wood to be found in this cuvee. The wine boasts a sensational plum/purple color along with a big, sweet nose of toast, black currants, black cherries, garrigue, licorice and underbrush. A quasi-modern style of Chateauneuf du Pape with excellent concentration, a voluptuous texture, a multidimensional mouthfeel and full body, it should drink well for nearly two decades." 

What is it made of ...

Half a dozen of grape varieties are present in this wine:

25 % of very old grenaches, then mourvèdre (25 %), syrah (25 %). The last 25% are made of "hors d'âge mixed grapes": cournoise, vaccarèse, etc. 15 different estates, 15 barrels only.

Yields of 25 hectolitres per hectare on average, manualy harvested

Vinification methods are almost similar for all big wines of this assemblage. Strict monitoring of grapevines all year long, grape harvest at perfect maturity, separate winemaking of grape varieties or by complementary couple, 100% aged in French oak barrels (25% new). Very weak S02 doses and very light filtering during the bottling.
